Position Overview:

The primary responsibility of the Function Stewarding Manager - Banquets is to oversee a team of stewards to meet the service requirements as specified by Banquet Event Orders. Function Stewarding Manager - Banquets is also responsible for creating individualized assignments for each steward, coordinating with other departments, and handling team member complaints and discipline. All duties are to be performed in accordance with departmental and The Venetian | The Palazzo Casino Resorts policies, practices, and procedures.

Essential Duties & Responsibilities:

  • Manages fourteen separate steward stations and directs the work of 40-50 stewards per shift that are responsible for the movement of food and service items from kitchens and preparation areas to function areas and removes dirty/used service items for return to dish room.
  • Prepares schedules based on a 10-day forecast and makes recommendations regarding temporary staffing needs.
  • Creates individualized packets for each steward per shift to ensure that equipment, food, and service items are at the appropriate location on time, taking into consideration multiple, simultaneous events with upwards of 250 daily functions.
  • Walks the service floor between set-up areas, function areas, and dish rooms to monitor progress of stewards and readjust staff as necessary.
  • Ensures that banquet kitchen is fully supplied with basic daily equipment, i.e. sheet pans, hot boxes, food inserts, etc.
  • Schedules, arranges, monitors, and executes delivery of food and service items from kitchen to all function areas, including on and off property locations.
  • Coordinates with other operational departments (culinary, stewarding, meeting services) regarding guest orders and changing needs, including equipment, food and menu items, delivery times, and other special arrangements.
  • Monitors compliance with food/kitchen rules, regulations, and laws.
  • Ensures that breakdown areas are built, properly staffed, and cleaned after each function.
  • Ensures that all equipment, transportation carts, and other items are cleaned and ready for use at the end of each shift.
  • Checks work areas and maintains compliance with local, state, and federal health regulations; corrects problems and deficiencies.
  • Prepares and disseminates shift report.
  • Handles team member complaints and concerns; issues and documents disciplinary infractions.
  • Consistent and regular attendance is an essential function of this job.
  • Performs other related duties as assigned.

Minimum Qualifications:

  • 21 years of age.
  • Proof of authorization/eligibility to work in the United States.
  • High school diploma or equivalent.
  • Ability to communicate clearly and effectively in English, both in spoken and written form.
  • Must be able to obtain and maintain a valid Nevada Food Handler Safety Training Card and any other certification or license, as required by law or policy.
  • Three (3) or more years of experience in a steward role with preference given to those in a high-volume environment.
  • One (1) or more years of experience in a stewarding management role.
  • Extensive knowledge of health and kitchen guidelines, regulations, and laws.
  • Demonstrated experience scheduling and assessing staffing needs in a fast-paced, frequently changing environment.
  • Demonstrated experience arranging service needs based on BEOs.
  • Must be able to work varied shifts, including weekends and holidays.

Physical Requirements:

Must be able to:

  • Lift, push/pull, carry 20 pounds weight, unassisted, in the performance of specific tasks, as assigned.
  • Maintain composure under pressure and consistently meet deadlines with internal and external customers and contacts.
  • Maintain physical stamina and proper mental attitude while dealing effectively with guests, management, team members, and outside contacts.
  • Withstand prolonged standing, stretching, bending and kneeling without restriction.
  • Work in a fast-paced, busy, and somewhat stressful environment.
  • Work indoors and be exposed to various environmental factors such as, but not limited to CRT, fatigue, noise, dust, and cigarette smoke.
